I have several willow trees around a small stock tank on my property. I am planning to cut these down, as I have been told that they will drink as much water or more than a human each day. :( The roots are also causing the tank to leak.
Is the wood from the willows good for anything? I plan to chip the smaller limbs and add to my mulch/compost piles, but are the large trunks of any use?

Chip as much as you can, willow is weak soft wood. Unless you are making some kind of wooden structure or furniture where you need wood that is easy to bend.
