 Post subject: What Now ?

I recently inherited 5 acres and have begun building my retirement home. I have never been a gardener on this scale, but with my newly aquired used tractor, here goes......... 8)
Behind the house will be my garden / orchard combination. The area is about 150 x 50.
This spring, in order to begin building the soil, I planted buckwheat, red ripper peas, and iron and clay peas.
This fall, I will be planting other cover crops, BUT.....
How or what to I do with all of the pea foliage I have?
Do I cut and till it in and then plant? Do I leave it laying on the ground and then plant the winter cover crop?

I would just mow the legumes and other plants and leave the residue on the ground. Only till into the soil if the residue is too thick to give good soil/seed contact. Either way the residue will be good for the new crops.
