Hello arborists and fruit tree experts! Maybe you can help me... I was gifted a few peach trees already in bloom which I've planted in my back yard. I've read that I'm supposed to cut them down to about 2-3 feet at planting in order to start a scaffolding structure. I've also read that you shouldn't prune trees except in the winter when dormant. So do I cut them back now or let them grow and wait until next Feb? Two of them already have small fruit on them.

All fruit trees should be pruned late in the winter just before bud break. Pruning earlier can cause early blooming and late freeze damage.

Leave them alone this year, except you should double check to be sure that they aren't planted too deep. The root stock (the graft) needs to be completely exposed and the flare needs to be in view, the bole shouldn't be poking straight out of the ground like a post. The flare is the spreading part at the base of the tree. I mention this because it is a mistake frequently made when planting grafted fruit trees.

Here is the information about how to prune/shape fruit trees.
