I want to attract butterflies bees and other insects, but some of the pollenless varieties are pretty. Will they attract insects?

Sunflowers attract lots of native bees. The pollenless varieties have only nectar rewards; you will attract more bees if you plant sunflower varieties with pollen. http://www.uidaho.edu/pses/Strickler/SolitaryBees/beegarden.htm#anchor1008672

Only the pollenless (and seedless) cutting sunflowers should be avoided if you wish to attract birds. http://www.birdwatchersdigest.com/bbn/articles/top_ten_flowers.html

That's all I could find for you on the subject, so far.
