What are the pros and cons and differences between fresh and old manure?

Fresh manure will burn your garden if you put it on. Old manure is compost. :D

But what about this article written by Howard Beck? I don't know what to make of it: http://www.malcolmbeck.com/books/gv_met ... heFarm.htm

Malcolm Beck, the co-author of "Texas Organic Vegetable Gardening" along with Howard Garrett, seems to be saying in this article, which is a part of his book "Lessons in Nature", that using fresh manure is fine. Is this correct that this is indeed what Howard Beck is saying?

And another thing, the really well-composted manure is ten times denser and heavier than the fresh manure/shaving mix I've seen. Just beautiful heavy mud and soil. But the fresh manure/shavings mix seems like 90% sawdust. It's like, where's the poop? Where is it? I couldn't amend a square foot with a truckload of this stuff it seems! Maybe it was just operator error and they just added too much sawdust. I don't know, someone help me understand what to do.
