Post subject:  Onions without bulbs

I have a few raised vegetable beds in my backyard in Fort Worth Texas and started some onion sets just after the new year. The onions became fairly large but never produced 'bulbs'. I do not have any history on what type they are but did I do something wrong? They look like leeks until you cut into them and are in fact quite tastey onions, just not what I expected when I went to harvest.
The pictures show me holding up the 3 I used in some soup as well as the the rest in the garden (with carrots) getting close to flowering.

You are harvesting too early. Normally you plant in Jan/Feb and harvest in late May. Are you tossing on some fertilizer every few weeks also?

Onions planted too deep in the ground will take on this appearance. I have some onions that were held over from last year, sprouted in the store room, were set in January and look exactly like this. In this case, they were too close together to form big bulbs. In any, they are still delicious to eat.

possibly they are long day varities? i planted some last fall that were long day and they are extremely large scallions taste delicious but they are begining to seed

I think they were planted too deep also. Take a look at this picture of what they should look like in the ground:
