Post subject:  ACT brewer question

The latest edition of "Dirt" made me think of a question I've been pondering, so I figured I'd finally post it.

In the basic 5 gallon brewer using a "tea bag", it is sometimes recommended to take the tea bag out after 6-8 hours, then continue to aerate for another 16-20 hours.
I know that this setup and procedure (see http://tinyurl.com/2w8235 for specifics) has produced very good results.

The question: Why remove the tea bag partway through? I know a lot of reasons for and against using a bag at all, but why for only part of the brewing time?

That was my website you linked to but Bruce Deuley was the original author of the plans. So I wrote to Bruce about your question. Here is his reply to me.

Thanks, David. I was hoping you'd peek in here.

I had thought that most of the fungi in teas came from mechanical extraction because they are just too slow to significantly multiply within the brew over a 24 - 36 hour timeframe. But since he tested it and Ingham qualified it, I'll go along with it.

ps - I wrote Bruce Deuley this afternoon, before seeing your post. I hope he doesn't mind getting hit twice with the same question.
