A few weeks back, when it was still cold, we put the peels from 5 pounds of shrimp in our compost bins. We're using plastic garbage cans with holes drilled in them as bins. Now that it has stared to warm up, no stink. We put the shrimp peels in with the leaves, other fruit and veg scraps and fireplace ash. Then we gave it a good roll around to get the shrimp peels good and covered with ash. No stink. Just passing that along.

Agreed. Dry leaves are magical in compost. They absorb the ammonia smells from decomposing protein.
