I have about a 100 year old Live Oak tree that I love. It shades my house from the evenings brutal west sun light. However, it is lifting my concrete driveway...... and my garage will be next.

How much root can I have cut out so that I can replace my drive way to make it level again?

This tree is too valuable in many ways to leave any chance of getting properly intentioned advice, but possible wrong. Go to one of the arborists that Howard recommends and have a professional quote, or better yet, two.
You might also think about cutting the concrete away from the roots of the tree and putting down some decomposed granite in its place. This avoids cutting any roots.
