Usually when people talk about a high protein grass, they are talking about a pasture full of a mix of grass and legumes. The protein usually comes from the legumes. Generally grass is higher in carbohydrates and legumes are higher in proteins. If you want high protein grass, I don't think you'll have much to choose from in the winter/early spring. Spring to summer though will give you some grasses. Orchardgrass is good. Johnsongrass is good if animals are going to eat it fresh but is a little harder to make hay. How about legumes like any of the clovers, alfalfas, vetches, or peas? Different varieties sprout and lush out at different times of year in different places.

One way to find a grass or legume for you is to go out and look in the ditches and see what's growing there. Whatever it is, it grows with zero care which always makes life easier. Determing the protein content is a little harder than growing it.
