 Post subject: Barley in compost?

I have friends who are starting a distillery here in Waco. Production should start in a week or so and once they get going, they will have probably over a 1,000 lbs. of spent barley each week. They are looking for solutions to recycle this.

I suggested composting and some other friends in town at a farm called World Hunger Relief are looking at the potential of taking it for composting.

From homebrewing beer I have had about a 5 gallon bucket worth of barley in the past that I've put in my compost. The animals (donkey, goats) will munch a little, but not very much because it begins to ferment quickly since it is wet.

It also gets a sour smell within a couple days and attracts a certain kind of butterfly.

Any ideas on the benefit of composting something like this, especially in these quantities? Other ideas?
