I live in McKinney Tx and have a Bermuda lawn. I have a grass height of 3" from the end of last year. I know scalping is not recommended so my question is how short should I cut my dormant grass and do you think the clippings should be picked up or just left on top of the ground to work its way into the soil?

I would suggest the following program to lower the mowing height to the lowest setting on your mower. Wait until the grass is growing to do this.

First mow at the current height of your mower. Do that twice in one week. Then lower it a notch and mow again, twice in one week. Continue doing that until you reach the lowest setting on your mower. And do not pick up any of the clippings. Bermuda needs all the nitrogen it can get and the mowed clippings are a pretty good supplement to monthly fertilizer. Bermuda is the only grass that really should be fertilized every month.

Why mow low? Bermuda becomes much more dense and weed resistant when mowed low. Instead of growing up, it will grow more outwards. If you wanted to invest in a reel type mower, I would suggest taking it down to 1/2 inch high.
