I grow these cuties in my garden and I need a picling recipe that will not turn them to mush . I use the water-bath method of canning and I have tried both hot and cold pack. For hot-pack, I barely blanch them. I do cut slits in them but still they float and I cannot get all the air out before sealing them. Perhaps I'd be better off with a refrigerator pickling recipe that does not involve heat? Any comments on vinegar packing vs. fermenting?
