I have cut open 20 plus melons this year, over the past two months, and everyone has a mostly white center with cores of pink. My first thought was they are not ripe. But I have left them on the vine until the skin was sunburned with the same results. I grew black diamond melons last year in the same place and they were red and sweet.
Luckily, the chickens love them. Any ideas why they are not completely red and ripe?

Tony-
Would the melon problem be b/c we haven't had rain in NEARLY A YEAR!!? Neighbors w/cantelope patch have had only a few mature (that I can see) but I haven't asked how the insides were.

Patty-
That's our first and obvious thought but Howard asked me to throw it out there and see what kind of responses we got. I've also heard that too much nitrogen can cause this. The only thing I added in that part of the garden besides some organic fertilizer was pecan leaves.
