I would like to lay some St. Augustine sod, but I would guess it would be hard to keep it alive in the summer heat. When is the best time to plant St. A in central Texas?

I'd like to hear from a professional on this topic. I'm guessing that the day of the last expected freeze would be a good day to start and continue for about a month or two. Then take the summer off and you could try it again in September.

The problem is the weak root structure during the hottest part of summer. You'll end up watering it nearly daily to keep it alive and then you're not doing it any favors because it really needs to be watered less often for drought hardiness. This is a tough one. I suppose fall would be the best time to sod.
