I was given two buckets with several starts of fig trees. One labelled, large brown and the other, small green. I was told that they needed to be planted all together. What is your recommendation?

Well figs are self fertilizing so you don't have to have 2 for cross-fertilization. The brown is probably brown turkey fig and the green may be Celeste. Both work well in the N.Tx area and can be planted in full sun. They are a small deciduous tree (about 15 feet tall) and can become very drought tolerant once established. The birds will love the figs but the tree produce so many that you will still be able to get your fill.
Enjoy them!!
