Hi!
I'm new to the forum and I am also a first year herb gardener, and I LOVE IT! I enjoy trying all the different combinations for herb tea. I would like to save some for the winter. Is freezing the method of doing this? Is so, is there anything special I need to do before freezing the leaves?

It seems to me like drying the leaves would be a much better way to save them. To dry herbs, I usually pull the stems with leaves intact, tie in a bundle, and hang upside down in the garden shed until they dry well. If you are afraid of the leaves crumbling and falling off, you can place a paper bag around the bundle to catch what falls. Just my opinion.

I agree, dry them, don't freeze them. I bundle mine with twine (don't use rubber bands-they stick & fall apart) and then put them on hooks I make by cutting up old wire hangers. Don't bother drying the rosemary, it doesn't work as well as fresh and as they are evergreen it's not really necessary. After they are completely dried, I put them in jars and seal the lid tight, then store them in the cabinet. If they are still moist at all, or get moist later, they can go bad, so be sure they are dry. Crush them to test if you like. I love keeping them all year round when I can as there's nothing like going to the garden to flavor your meals. :D Hope you enjoy herb gardening...and read a lot to see how many ways you can use those herbs...it's amazing!
