I thought I would share a favorite recipe for cold days like we will have this weekend. I hope you enjoy this chili recipe as much as we do. Serve over brown rice cooked in chicken broth (preferably homemade). Of course it tastes best when using all organic ingredients!

Chili

Seasoning Mix
1 1/2 Tbl. chili powder
1 tsp. ground coriander
1 tsp. ground cumin
1/2 tsp. oregano
1/4 tsp. cayenne peepr

1 lb. pastured ground beef
1/2 yellow onion
2 cloves garlic
1 Tbl. E.V. olive oil
1 28 oz. can diced tomatoes
1 15 oz. can tomato sauce
1 can kidney beans (or 1 1/2 cups cooked)
1 can soup beans (kidney, pinto and black)

1. Mix together seasoning mix.
2. Cook and drain ground beef in LaCrueset size 24 pot.
3. Saute onion and garlic with 3 tsp. seasoning mix.
4. Add tomatoes, tomato sauce, soup beans and
2 more tsp. seasoning mix.
5. Place kidney beans in food processor and process
until smooth.
6. Add kidney beans and meat to pot.
7. Stir together.
8. Cook on low heat for several hours.

Can also be made in crock pot.

Guess what I had for lunch?

I happened to see Mary's recipe this morning and immediately began putting it together. About a half hour later I was stirring the entire mixture. My wife ground up some organic corn and whipped up a batch of corn meal muffins.

I highly recommend this easy, nutritious recipe.

I made this the day b/4 it was posted, only w/3 times the spices! :) Today I have going a pot of navy beans, chopped celery, chopped onions, diced potatoes w/the end of a ham. Pepper to taste...I'd put down the amt's but didn't measure. It smells right!
