We only add fruit and vegetable scraps in our compost bin. We are recently seeing lots of worms that are grey and about 2-3 cm long and very loud eaters. We have been composting for about a year and this is the first time we are experiencing this. Is this normal or is our compost mixture out of control?

Sounds great to me! You really can't screw up a compost pile. In time, beneficial microbes and larger organisms will break any form of greens and browns, and develop healthy mature compost.
